“The sorts of dragon well tea and water come in a vast variety. Only good water can infuse tasty Dragon Well tea.” This saying reveals that the close relation between Dragon Well tea and the water to steep it. Speaking of Dragon Well tea cannot be separated from talking about water.     
In The Book of Dragon Well Tea written by Xu Cishu, who lived in the Ming Dynasty, there was a sentence goes that, “The aroma of high quality tea sends out with the help of good water. If there is no fine water, the chatting about Dragon Well tea can’t go on.”  Zhang Dafu, in his Conversation by Writing in the Humble Plum Cottage, said that, “The nature of Dragon Well tea draws support from water. Perfect water can fully show the outstanding quality of the tea. ”
Speaking of the tea infusion of longjing  and water, generally speaking, water plays a more significant role than Dragon Well tea. This is not merely because water is the carrier of the color, the aroma, and the taste of longjing tea. Besides, the embodiment of the components of Dragon Well tea, the generation of pleasant sensation and the endless aftertastes of Dragon Well tea are all realized by water. In addition, the nutrition constituents, and the pharmacological functions of Dragon Well tea are finally achieved with the assistance of water to see, smell and taste. Provided that the quality of water is poor, most of the components of Dragon Well will be ruined.
